Lightly beat eggs, vanilla, and 1/4 tsp cinnamon in a shallow bowl.
Dip bread slices in the egg mixture, covering both sides.
Transfer bread and apple slices onto a skillet lightly coated with coconut oil or butter. Cook both sides, sprinkling on extra cinnamon before and after flipping.
Once French toast is golden and apples are tender, remove from the heat. Spread peanut butter on two slices and arrange apple slices on top.
Mash banana and spread on the other two slices to create a sandwich. Serve with extra fruit and any other desired toppings.
