Overnight Buckwheat and Berries

 ½ cup berries (frozen or fresh)
 ½ large banana
 ½ cup vanilla unsweetened almond milk or coconut milk
 2 tsp honey
 1 ½ tbsp chia seeds
 ¼ cup buckwheat groats
 peach slices (or other fruit of choice)
 shredded coconut (optional)

Combine berries, banana, milk, and honey in a blender. Blend until evenly combined.

Pour into a jar. Add chia seeds and buckwheat groats. Stir until evenly combined.

Refrigerate overnight then top with peach slices and shredded coconut. Enjoy!
