Orange Cranberry Granola Bark

Ingredients
1 ½ cups rolled oats
¼ cup crushed almonds
¼ cup crushed pecans
2 tbsp seeds (flax, chia, hemp, or a mix)
1 ½ tsp cinnamon
½ tsp nutmeg
½ tsp cloves
½ tsp ginger
1 tsp orange zest
1 tbsp honey
2 tbsp maple syrup
1 tsp vanilla extract
1 tsp olive oil
1 large egg white
½ cup dried cranberries
1 ½ cups dark chocolate
Directions
1Preheat oven to 350 degrees Fahrenheit.
2Combine rolled oats, almonds, pecans, seeds, cinnamon, nutmeg, cloves, ginger, and orange zest in a mixing bowl. Stir to combine.
3In a separate bowl, combine honey, maple syrup, vanilla, olive oil, and the egg white. Mix well.
4Combine the wet mixture with the dry mixture and add dried cranberries. Stir until evenly combined.
5Line an 8x8" cake pan with parchment paper, leaving any excess up the sides. Pour in granola and spread evenly in the pan.
6Press down on granola using the back of a spatula.
7Bake for 25-30 minutes, until hardened. Monitor the granola to make sure it does not burn.
8Remove from oven and let cool for about 15 minutes.
9Melt dark chocolate in the microwave. Use 50% power for one minute, stir, then microwave in 15 second increments until fully melted and smooth.
10Pour chocolate over granola and spread evenly. Sprinkle on shredded coconut, if desired.
11Refrigerate until hardened, about 20-30 minutes.
12Cut into squares and enjoy! Store in an airtight container.
