Healthy Banana Bread

 1 Tbsp flax seeds + 3 Tbsp water
 3 large overripe bananas
 3 Tbsp coconut oil, melted (may sub another oil)
 3 Tbsp Greek yogurt (substitute with oil for vegan)
 2 tsp vanilla extract
  cup sugar
 2 Tbsp honey or maple syrup
 ¼ cup almond (or another) milk, more or less to consistency
 1 ¾ cups flour (I use 1 cup all-purpose and 3/4 cup whole wheat)
 2 tsp baking powder
 ½ tsp baking soda
 ¼ tsp salt
 1 ½ tsp cinnamon*
 ½ tsp nutmeg*
 ¼ tsp ground cloves*
 *optional... gives a great cinnamon spice

Preheat oven to 350 degrees, and grease a 9x5 inch loaf pan

Combine flax seeds and water in a small bowl to make a “flax egg.” Set aside.

Mash bananas in a large mixing bowl

Add melted coconut oil, Greek yogurt, vanilla extract, sugar, honey, and almond milk. Mix well.

Stir in “flax egg”

Add flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

Stir the dry ingredients on top then mix lightly into the batter until just combined. The consistency should be thick and wet, and a few lumps are ok.

Transfer batter into prepared loaf pan.

Sprinkle a generous amount of brown sugar and cinnamon on top.

Bake at 350 for about 50 minutes, until a toothpick comes out clean.

Let cool in the pan for 10-15 minutes, then transfer to a wire rack to cool more.

Slice and enjoy!
