Crustless Spinach Quiche

Ingredients

Filling
 4 eggs, beaten
 16 oz cottage cheese
 1-2 cups cheddar cheese, shredded
 3-4 green onions, sliced
 a few large handfuls spinach
Topping
 ¼ cup plain breadcrumbs
 large dash garlic powder
 large dash parsley
 salt and pepper to taste

Directions

Preheat oven to 325 degrees Fahrenheit

Grease 9" pie dish

Mix together eggs, cottage cheese, cheddar cheese, green onions, and spinach in a large bowl. Spread in pie dish.

Bake 45 minutes.

Combine breadcrumbs, garlic powder, parsley, salt, pepper, and a drizzle of olive oil in a small bowl. Sprinkle on top of the quiche.

Bake 15-20 more minutes.

Let cool slightly and enjoy.
