Chickpea Cookie Dough

 ¼ cup oat flour (or rolled oats ground into a flour)
 1 tbsp flax seeds (optional)
 ¼ tsp salt
 1 can chickpeas (15oz) rinsed and drained
 ¼ cup peanut butter
 ¼ cup maple syrup
 2 tsp vanilla extract
 ¾ cup chocolate chips

Combine oat flour, flax seeds, baking powder, and salt in a food processor. Blend to combine.


Add chickpeas and process until smooth.


Add peanut butter, maple syrup, and vanilla extract. Blend until evenly combined, using a spoon to scrape down the sides if needed.


Stir in chocolate chips and enjoy! Store in an airtight container in the refrigerator.
