Berry Pomegranate Chia Parfait

Ingredients
2 tbsp chia seeds
½ cup milk of choice (vanilla unsweetened almond milk works great)
2 tsp honey, divided
½ cup cooked oatmeal (rice, farro, or other grains also work well - you can even try muesli)
½ cup berries (fresh or frozen and thawed)
handful diced apple slices
a few dried cranberries
¼ tsp cinnamon, more or less to taste
pomegranate seeds
granola
Directions
1Combine chia seeds with milk and 1 tsp honey. Stir and refrigerate for at least one hour.
2Spoon about 1/2 cup cooked oatmeal into a bowl or jar.
3Bring 1/2 cup berries to desired temperature. Lightly smash berries and stir in 1 tsp honey, if desired. Layer on top of oatmeal.
5Toss apples and dried cranberries in cinnamon until lightly coated. Layer on.
6Top with pomegranate seeds and granola.
