Apple Hand Pies

Ingredients

 2 cups flour
 1 tbsp brown sugar
 3 tsp lemon juice
 ½ tsp salt
 ½ cup ice water
 1 cup butter
 1 tbsp apple cider vinegar
 4 apples
 ¼ cup raw sugar
 1 egg
 1 tsp vanilla extract
 1 tsp cinnamon
 ½ tsp nutmeg
 ½ tsp allspice
 1 pinch ground cloves
 1 tbsp cornstarch

Directions

Pie Crust

Whisk together flour, salt, apple cider vinegar, 1 tsp lemon juice, and brown sugar in a large bowl.

Dice butter into small cubes and mix into flour mixture with pastry blender or a fork and knife.

Add ice water to pastry mixture and knead dough until a smooth ball is formed. Cover and let sit in refrigerator while you prepare filling.

Dice apples into small cubes. Heat about 1/2 tbsp butter in a skillet.

Cook apple for about 3 minutes, then add in vanilla extract and spices. Add 1/4 cup water to skillet and cook for about 2 more minutes, or until apples have softened, but are not squishy.

Transfer to a medium sized bowl and stir in 2 tsp lemon juice and cornstarch to thicken apple filling.

Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. Remove dough from fridge and place on a floured surface.

Roll out pastry dough to about 1/2-1 centimeter thick. Use cookie cutter or the rim of a cup to cut circles out of the dough.

Prepare egg wash by combining 2 tbsp with one egg. Use a basting brush to apply egg wash to the outer rim of half the pastry circles.

Scoop about 2 tbsp (or desired amount) of apple filling onto each pastry circle. Place another pastry circle on top of the filling, and crimp the edges with a fork or your finger.

Transfer hand pies onto lined baking sheet, and brush egg wash over each mini pie. Sprinkle a generous amount of raw sugar over crust. Use knife to cut air holes on outside of pie.

Cook for about 30 minutes, or until golden on top. Serve with vanilla ice cream, or let cool and freeze for later, enjoy!
